In India, mustard thrives particularly well in loamy or clayey loam soils. For instance, farmers in North India grow it as a rabi crop, whereas those in South India cultivate it during the rainy season, which lasts from July to November.

Mustard is processed into a variety of products. For example, manufacturers produce mustard powder for mayonnaise, dried or dehydrated mustard leaves, and whole mustard seeds. In Indian cuisine, whole mustard seeds serve as a flavoring agent in dishes, while ground mustard enhances the taste and consistency of Bengali fish curries.
